What is Tepo Tahu?

Tepo Tahu is a traditional food consisting of the basic ingredients of tepo, tofu, and various other additives. 

This food at first glance looks almost similar to lontong tofu or kupat tofu but has a very distinctive presentation and taste. Tofu tepo is one of the traditional foods from Ngawi, East Java.

The specialty of Tepo Tahu

One of the characteristics of Tepo Tahu is the use of tepo and egg tofu as the basic ingredients. This tepo is the food like rice cake, only the shape is different and the texture is softer. 

While the egg tofu is made from tofu mixed with eggs and fried. In addition, this Tepo Tahu sauce is unique and simple, because it only uses soy sauce, tamarind water, and other spices.

Processing and Presentation of Tepo Tahu

Tepo Tofu consists of tepo, egg tofu, bean sprouts, fried peanuts and doused with a special sauce. To make this egg tofu, first, the tofu is soaked in saltwater and then mixed with the beaten egg after that it is fried. 

As for the Tepo Tahu sauce itself, it is made from ingredients such as garlic, cayenne pepper, brown sugar, tamarind water, salt, and sweet soy sauce. First, the garlic, chili and brown sugar are mashed. 

Then mixed with Java water and hot water, then stirred until smooth. After that, add sweet soy sauce and salt until it tastes just right.

In serving tepo and tofu cut into pieces and arranged on a plate. After that, add ingredients such as sliced ​​cabbage, bean sprouts, sliced ​​celery, fried onions, and fried peanuts.
